Girls+Food


What do you get when you mix girl friends and great food? Real talk. Great fun. Laughter that could fuel a steam engine.
I got giddy when my two dear friends Brielle and Caroline came over the other night to spend some much needed time. You must understand that these are no ordinary friendships. Rather than shallow chatter or derogatory drudgery, our conversations are full of dreams. Dreams which status stand currently as "what if's ", however, there is a collective silent understanding that they will become "what is's". Don't get me wrong, boys, trends, and hair are all innocently intertwined. :)
We went on a slightly directionally confused walk, and decided we are officially maturing. Not too long ago a "walk" was not on the top of my "to do" list with friends. But now, as long as we get to share our hearts it doesn't matter what we do. Afterwards, we had a BYO omelet party, and Grilled Bacon Peaches. The loaded omelets were good, but the peaches were an unexpected delight! For the recipe from Health-Bent click here.
So here's a tribute to my special girl friends and great food! Brielle thank you for your gentle fierceness, it stirs me to continue dreaming. Caroline, thank you for encouraging me to live a life of Grace, and laughing at my jokes. Words cannot express my heart's delight that I get to do life with you both!

Farewell {for now}

Have you ever watched a struggling team, clearly the underdog, win a championship game? Have you ever known someone, who despite enormous opposition, now living a colorful, dynamic life? What is it inside of us human beings that is always cheering for the less favored, the less talented?
There's something fascinating about the thrill of seeing someone who seems to have no strength left reach deep down, tap into a supernatural courage and overcome all odds, and expectation. It's the sweet taste of redemption. Redeeming time of hardship and long hours of training or struggle.
In efforts not to over dramatize, let me put this in perspective. I can't say that I have recently broken any world records, or found a miracle solution for providing clean water for the whole world. However I have experienced something extraordinary these past months. I have witnessed first hand, for the first time, God's redemptive power in my life. It all started with losing control. The striving ceased. Anxiety lessened. Trust (faith) increased as I sat back and walked through open doors instead of trying to bust 'em down myself.
It's like my life has shifted from a first person, to third person perspective. I am not writing my own story. The pen is not in my hand anymore. Instead, the pen is in God's hand, and I am able to sit back and read. What I've noticed is that my life has been marked with a strange peace, unending joy, and giddy excitement. I savor every sentence, yet I can't wait to "turn the page" to see what the next chapter holds.
This summer has been the best thus far, by far! I am thankful for my family. I will never be able to repay them for their loyal support and loyal love. I am thankful for my friends. I have connected with some of the most passionate people this summer, specifically at Substance Church and been continually challenged and encouraged. I wish I could thank EACH of you in this note for your friendship and the unique joy you bring. If you're reading this, you are precious to me. Know that.
This summer has been marked with random excursions, blissful conversations, summer night shenanigans, great food, and beautiful people. Literally too good to be true. But it is true!
Let me take a moment to say this as well: I know that this hasn't been every one's experience these past months. May I have the privilege of empathizing with you? Because that underdog, the "least likely to succeed"...that was me. The past 3 years especially, has been an up and down internal struggle that manifested in several different ways. I thought the dreams I had were simply too extravagant, the odds were stacked WAY against me. I know me. I know what I do...what I've done. The thought of being someone great, or rather used by someone GREAT, seemed impossible. But the tears, the depression, the sweat, and ultimately God's faithfulness has granted me the "win".
I am the weakest link that has become the strongest. I am the loser that has just won the greatest prize. I wear the championship ring proudly and loudly. That ring holds a purpose and meaning for life. The hope of things to come, the strength, the Grace TO DO. Who knows that God loves when the odds are stacked highly against us in order that He may take them and show off His magnificent power??
The ironic thing is, this is all spurred by allowing myself to read my story verses trying to write it. Life is no longer a "strive-fest" but a "rest-fest". A rest in the One who gives me and leads me each step which has been planned out perfectly beginning to end. I know I will "side step" the plan occasionally, but no matter how many steps I get from the Path, it's always just one step to get back on track.
So it's far well for now from my home in Minnesota, for the final year in my home in Alabama. It seems like it'd be hard to leave in spite of such a wonderful time. But there is much to learn, much to do, much yet to be revealed. I am so excited to continue to share this journey with you Thank you from the bottom of my heart for your support. I pray that your time of redemption comes soon, because if you're not already wearing it, there is a championship for you to wear. I guarantee it's a big, blingy, and perfectly sized ring just for you. Also, that you would take heart during the process.

Beach Workout

Are your workouts lame??
If you find yourself waking up to a sunny morning, a calm lake (body of water), and NO life guards. Try this stellar beach workout. It's a great way to increase cardio and strength with high intensity intervals and body weight strength training. All of which equates to FAT BURN. Gotta' love me some of that. Here is the workout I did the other morning. Keep in mind you can up the reps, speed, or change up the order in any fashion to suit your fitness level. Push it. Don't take it easy just 'cause no one's there ;)
But better yet challenge a friend!
A Beach of a Workout:
(If you dare...)
I did this all in the sand on the beach. For sprints I ran the beach longways which was about 200 yards. Running on the sand is much more of a challenge, but great for strength for fine tuning the littler muscles and increasing speed. Slap on a swimsuit if you're feel hardcore, because you will be getting wet.

Warm up with a 5 minute jog
  • 50 Walking lunges
  • 50 Mountain climbers
  • 2 Minutes Plank
Repeat this 3 Times
  • Sprint to the end of beach and back (200 yards)
  • 25 Push ups
  • 25 Tricep dips (find a bench or curb)
Repeat 5 times
  • 25 Jump squats
  • 25 Sit ups (You can do different variations)
Repeat 3 times
Now that your good and sweaty, (this took be about 30 minutes) dive into the water 'Baywatch style' and finish with 30 minutes of aqua jogging. (Don't laugh. It looks pretty strange.) If that's too fancy for you, swim laps. End with some good stretching. I guarantee you will feel your legs a little upset the next morning.
You'll get over it.

A Midsummer's Afternoon {reflect}







It's time to face the music. Summer is mid way through. It seems to me that summers are a short, and unique season for us. Even those with full time jobs that no longer get the luxury of a "summer break", there's something about staying up extra late and squeezing every ounce of fun from a lovely summer day.

Perhaps is the added Vitamin D that allows us to relax and step out of rigorous routine for a moment...or two. This has prompted me to seriously consider buying a tanning bed. Just think- year round Vitamin D bliss! Just kidding. Don't do that. :)

These past few summers I have noticed a trend, maybe you will be able to relate. It starts like this:

The start of summer is always trying to wind down my brain and my schedule. Still feeling the "afterglow" of highlights from the past year that carry with it a powerful hope for possibilities for the upcoming summer. Because of high hopes, it's like being on steroids sometimes when opportunities come. Whether it's serving, spending time with people, joining someone in some short term "venture." It's like my mind is saying no, but my body is so jacked on "what if's" it twitches as I subconsciously nod "YES!" "Pick me!".

Although the passion is very real, and the commitment there, it always seems to strike me (about midsummer) that things aren't working out quite as planned. Some things are better than expected, and some things seem to completely drop off to the way side.

I miss understand my lingering passion and lack of rigorous routine for a lack of spirituality and faith. Unfortunately in the past this has taken me some time to figure out. I tend to feel discouraged, positive that something is wrong with me. "I'm just not seeking God like I did this year. How come my city isn't all worshiping Jesus yet? How come I haven't seen any crazy miracles this summer?"

Haha. Am I the only one who thinks like this? Join me as I put an end to the trend...

Breath. Take in the moment right now. Take in the view on the other side of this screen. Ready?


No matter what we feel God is always there. Always.


I give them eternal life, and they will never die. No one can steal them out of my hand. John 10:28


If you have committed your life to Christ, no matter where you are, what you do, how you hurt, if your heart is set on Him, you will not fall from His hand! You see, my mind and my heart were in different seasons, and warring against each other. Causing an internal battle that led to anxiety, unrest, and depression. A farmer doesn't harvest in the Spring, or plant in the Summer. This would be very inefficient, and certainly not profitable!

As I take some time to reflect, I am reminded of this Truth. Why am I trying to reap the harvest, when I am supposed to be tending the field?

I am happy to tell you that I have "nipped it in the bud". I am doing what God has called me to this summer. Resting in His Love, and soaking in His Truth He has revealed. Since then, oh boy, I wish I could describe the freedom and almost silly ecstasy of His presence and unexpected plans. Not always a feeling,(in fact recently nothing really emotional at all) but a deep assurance of being in the palm of His hand. He promised me that, He promised you that.

I encourage you to recognize or remember what God has called you to this particular season. Rest? Direction? Relationship? Work? Simply acknowledge it, ask for forgiveness for contradicting His ordained "season" for you. Take joy in focusing on just that thing.

Remember no matter what circumstance surrounds, or what your heart feels, know that God is greater than your heart and He knows everything. NoTHING can snatch you from Him.


That's how we know that we hold to the truth. And that's how we put our hearts at rest, knowing that God is watching. Our hearts may judge us. But God is greater than our hearts. He knows everything. 1 John 3:19-21


Reflect today. Enjoy today.

What I Eat

Many of you have asked me..."what do you eat?" Or, "why?!"

This is my open ended conclusion after studying, failing, growing, asking, and pondering the “right way” to a healthy lifestyle and diet. I have been hassled and sometime criticized for the way I eat. Probably because what I eat is a very foreign concept to the average joe. Some may think it’s a fad, or an obsession. Both are wrong. I am fascinated by God’s marvelous creation of the body. It is designed to heal itself and has the capacity to do amazing things if we treat it right. No longer will I be bashful about the what I eat, in fact, like every good thing I discover I desire to help others in their quest for optimal health.

Let me preface with the obvious, everyone is different and has different habits. And I certainly do not have all the technical terms or diagnoses for you. (However I have many resources to share.) But I do have a brain, a highly functioning body, and a desire to live a long adventurous life. Do you know what that requires? Health! Like normal blood pressure, low cholesterol, a sharp mind, high energy, healthy weight and an absence of any mysterious growths.

In a culture completely obsessed with “health food” jargon, and a bazillion studies and supplements, diet everything, I wanted to cut to the chase. Just like I know where I stand in my faith and am not swayed by any other “way”, I wanted to have a clear guide in my outlook on nutrition so that I would not get swept along in the massive tidal wave of the American Pop Culture Diet. These new Pop Culture Diet’s are accompanied by luring promises. Many people have mistaken this ‘tidal wave’ for a joy ride rather than what it truly is, a deadly force.

Though this rant could get quite extensive I will try to condense it into a few main points that I (and someday hopefully my family) will happily live by. This is what I eat.


1.) I eat fat.


-Do you know that your brain is made up of 50-60% of structural fat? Or that your brain takes up 2% of body weight but consumes 18% of its energy?! And that your neurons that transmit messages in order for your body to preform any function are made largely of fat? Therefore a “low fat” diet is robbing your brain and is probably making you crazy! I will never settle for lackluster low fat, high sugar foods again. You know what’s coming next...it’s all about the “good fat” right? Right. There is Omega 3 and Omega 6 fatty acids. Most of processed foods have large amounts of Omega 6 fats. What American’s lack is a healthy ratio of these two fats. An over production of O-6 is the cause for most diseases effecting everything from insulin resistance (your body’s natural full feeling) to high blood pressure. A healthy ratio between the two is less than 4.


-I finally figured out that low fat usually means high sugar. High sugar makes you more hungry, never feeling satisfied. It’s virtually impossible to overeat healthy fats! I finally know what it means to feel satisfied because I’m not afraid to cook with Olive or Canola Oil, or slappin’ my corn-on-the-cob with a hunk of some natural butter.


-I enjoy fats like, walnuts, almonds, avocados, guacamole, red meat, eggs, full fat yogurts, olive oil, canola oil, organic butter, coconut oil, or dark chocolate (75-90%)


2.) I eat gluten-free.


-I know that I have an intolerance to grains. A large percentage of people do, but will never know it until they go with out for a period of time. My body gets achey, I have low energy, and high inflammation when I eat grains. Generally speaking, grians are harder for your body to digest and gluten is highly allergenic. At first it seemed daunting to go without bread or grains, but now it doesn’t even phase me.


-I eat plenty of quinoa, which works as a substitute from everything like rice to oatmeal. I also bake with different flours such as almond, coconut, or substitute with flaxseed.


-Do you know that often the thing you crave, is what your body is actually allergic too? So for me, carbs like bread (even whole grain) and pasta was a no-go.


3.) I eat late at night.


-The myth of late night eating has been drilled into our head as a subconscious “no-no” somehow or another. Either from grandma, or that “health nutty” friend. Studies have been done however that completely debunk that myth. The reason late night eating gets a bad rap is a mix up of correlation vs causation. Most Americans that eat late at night have odd work shifts and turn to fatty, processed foods, and have a lack of exercise. People that “skip” breakfast and become overweight probably have an unhealthy lifestyle and make up for it with unhealthy food later in the day.


-I usually eat in an 8 hour shift. So if I skip breakfast, that’s fine I just start my meals at lunch and usually have three generous meals throughout the day. It works for me not to think about food so often, and I get a lot done! It doesn’t matter if I have my last meal at 8 or 9 at night. Just 8 hour eating periods. Simple. Against many standard American nutritional suggestions...but the more I learn, I don’t give much weight to what the USDA says about food consumption anyways...WHAT SO EVER. No longer do I fall for most magazines or the general public stances on health. Because it’s driven behind advertising, sales, and hype. It’s important to find out for yourself what works for you and what is healthy. Not only in nutrition, but be discerning, and wise! Don’t make the mistake I made of being spoon fed a bunch of pureed bologna of the general health trends.


4.) I eat whole.


-Because I eat whole, real foods, I eat a lot. No calorie constricting or worries. Just like healthy fats, have you ever over eaten on apples or carrots?


-I eat lots of fruit, veggies, hummus, walnuts, tea and coffee, jerky, and milk (mostly soy or almond), and my own protein smoothies.


-There is so much added sugar to a vast quantity of our foods including yogurt and cereal. I have loved learning ways to cook without it and certainly feel much more energy when I avoid added sugars. When I make treats I will use honey, molasses, or stevia sparingly. I’ve noticed that as I became used to no added sugars, natural sweetness is much more sweet!


-No I don’t feel deprived-I make some mean alternative treats that are WAY better than that double stuffed oreo you just stuffed in your mouth. Checkout the other blogs I follow for amazing recipes. Here is one I made recently. Brownies!


5.) I eat meat.


-I believe in high protein! Plus everyone, and I mean EVERYONE likes meat. Satisfaction Guaranteed: even a vegetarian’s mouth waters when the waiter place a sizzling juicy fajitas order in front of their friend.


-Meat and slow absorbing protein like eggs and cottage cheese satisfy and give you energy! Energy to do cool things. Energy that doesn’t leave you feeling like you want to eat the rest of the box of those sugar laden protein bars. (AKA candy bars in disguise)


-With my love of meat I am currently trying to cut down on my ketchup consumption. I am like a 3 year old... needing ketchup when meat is served. But ketchup is really just sugar. Unless you make your own...


PS. I will never again calorie count

PPS. I didn’t even touch on artificial sweeteners. I understand they are ravenous on your body. Not going to lie, sometimes I can’t say no to a diet A&W or 7UP. But most of the time favored sparkling water does the trick.

PPPS. I hope this helped some of you, at least maybe you understand my somewhat strange habits a little better. I would love to answer any questions, share recipes, or advice. Not to mention my extended personal story of my nutritional “journey.”


Like I said before, I believe we are meant to live incredibly amazing, purposeful life. We are three parts, mind, body, and spirit. Balance is absolutely necessary, and each part is vital. I hope this note helps to strengthen all three.

I spent a beautiful Memorial Day with my family lounging around home doing the unimportant, restful things you're supposed to do on a holiday weekend. The momma and I took a walk down by the lake. It was warm, windy and overcast, but refreshingly summer. As we walked and talked, enjoying eachother's company we were passed by bikers, joggers, and strollers. Everyone was taking in the view of the massive lake and the sharp white trails left behind by windsurfers.
We stopped a few times to admire blooming flowers, kneeling in close to get the concentrated scent of their sweet aroma. Walking on I bent down to grab a white fluffy dandilion. I couldn't resist the full white top, perfictly ripe for blowing seeds in the wind. I took a great breath and watched as the seeds floated carelessly away, very quickly I was left with a bare stem. The momma came up behind me and said with a smile," This is your summer." I shot her a puzzled look. "Yes, this is what your summer is like, just planting a bunch of seeds."
I laughed as I was getting such a marvelous revelatation from a weed. She was absolutley right. This summer, (and probably for the rest of my life) is all about planting little tiny seeds. It's like blowing the seeds away on the dandilion. We have no control where they land, how they're recieved, or what they become. The only part we are responsible for is taking that breathe.
Little seeds of kindness, of time spent with a friend, a smile or encouraging word to a stranger, an invitation, a prayer, a little seed of sometimes minute inconvient sacrifice.
Take a breath,
watch it float away,
no need to fret,
it shall bloom someday.

Alive.

I have this awesome friend named Brittany who is a total radical. Brittany knows that Jesus is just as relevant as He was 2000 years ago. She attends a college outside of Birmingham. A beautiful campus, and a impressive academic reputation. Brittany asked me to come to campus over break to take some pictures of a sign she had painted. I wasn't surprised when I saw what it read.
Jesus is Alive.
I smiled ear to ear, believing that this would be much more than just pictures. Faith mixed with action, speaking about what will come. It takes faith because right now this particular campus has a reputation of suicide and witch craft, just the opposite of Love. It also requires action, because a belief that just sits inside of our noggin' is just that. A stagnant,safe,and harmless dream.
As we walked around quiet campus we got chills thinking of the miracles that Jesus has in store. We made some friends who cheered as we snapped the pictures and freely volunteered their services. We ran into a student who looked like she hadn't slept in three days, beautiful green eyes hidden underneath a thick black paste. Her black hair fell into her face as she zipped up an army green oversized coat. Her unlikely state took my by surprised and I blurted out some sort of awkward greeting, just for a second of her time.
It turns out she was wiccan and didn't believe in "our God", but she was kind and moved to held back tears because the Love that rested on Brittany and I. We said a short prayer for her and sent her off. Just one soul that we are believing to be transformed because of a wee bit of faith from two average kids.
I am going to be involved in a college age group starting on Friday nights with some stellar people. Brielle Hoffman, Allen Pedrum, and Adam Westly. We believe God has some seriously big plans for this group. We desire to build a real, strong,powerful community that is compelled by Love and filled with the Word. Please come and join us.
Bottom line. Jesus is Alive. Let's start living like it. Ask big. Read the Word, and believe with all your heart everything that it says. Test it out.Come spend your Friday night's with us. I dare you.

Literally Living

I'm currently living in Birmingham,Alabama. It's the third month at the ministry school im attending here(Twentyfourseven Ministry School). It just dawned on me how many awesome opportunities I've gotten. And I'm wondering... Is this normal? Is it normal to regularly travel the country, and anually travel the world? Is it normal to absolutly love what you do while being fulfilled by it? Is it normal being surrounded by such great friends who are always thinking of how to better themselves and others around them?

It's like I'm literally living. Literally doing the things I was created to do.

Anyhow, it is my goal to document some of the opportunities throughout the rest of my year here. There is just so much I'm learning right now, in my heart and my head...I'm about to burst. Bear with me as I upload some thoughts. Hopefully it will download into you :)

This is a few pictures from Atlanta last weekend. I went with my friend Seth,a crazy brilliant, and creative bearded artist along with Adam, a music guru up for anything . The drive was a veiw painted with brilliant fall colors and leaves dancing in the road, the smell of pumpkin spice lattes,and eclectically chill music serenading our ears. It turned out to be a pleasantly warm day downtown Atlanta, and after a good hunt through Ikea, and H&M (a perfect shopping pair) we spend it walking through Peidmont park snapping pictures like professionals and watching all sorts of interesting people. The day couldn't of been better. It was topped off by a glorious myriad of colors in the sun setting sky.

I hope today you think of one thing that burns within your heart. What makes you cry? Change it. What makes you hurt? Fix it. What makes others laugh? Do it. God will joyfully give you what you need, without holding back.

Summer Lovin'



What's more fun than a local farmer's market?
Don't you get all sarcastic with me now...there may be a feeeww things a bit more fun. But you can't beat the vibrant colors, the friendly people, the fresh food, and the satisfaction of knowing you are being eco friendly.
(Pshh.)
It was a perfect summer morning. And I was with a perfect companion. My Mom and I went to the farmer's market.
Thank you Lord for summer. Maybe this year you could grace your northern friends with a few extra months??? Just a thought.

My Grandma's recipe pictured above...

3-4 sweet onions
8 small zucchinis
4 medium tomatoes
(get them at your farmer's market for an optimum tasting experience :)

sauté onions and zucchinis together until soft with a dash of olive oil and fresh garlic, add tomatoes last. Crumb feta cheese or parmesan to taste. Serve over brown rice.
Serves 3-4.

I scream you scream..


I have a confession blogger buddies.
I had an over indulgent,glorious,summer day...
Maybe I will feel better after getting this off my chest.

I just want to let you all know that I went to Cup n Cone (the local ice cream shop) three times today.
Yes, you read correctly. THREE TIMES! Once with Cassidy and my cousin Dawson, once with the fabulous Brittany and Brianna, and then the radical Neal and my gnarly brother Kody.
Because it's more than just ice cream. It's a place to chillax and take in perfect,glorious summer days.

So anyways...I feel a little better. I'm positive that confessing the ice cream fest I had in my stomach today, torched some major cals. But I don't feel bad, because I had baby cones all three times. Guess what...that probably equals one small cone...right?

From the Inside Out

Today my sister Cassidy and I spent the day just goofing around doing girly things. She biked while I ran, then we listened to a message together online. The Pastor Steven Furtick reminded us that God created each of us with incredible intention. That He literally knit us together in our mother's tummy. From the inside out. He said a brilliant line that stood out like a salsa dancing eskimo.
"
You cannot cover insecurity on the inside with your appearance on the outside."

Since we were literally created "insides" first, it should be our priority. 'Cause if your insides aint lookin' good, your outside sure aint gonna look much better. For long. That is the secret to beauty my friends. (Or security for you feller's.)
Today the word lovely is on my mind. So I took some pictures of my lovely sister as we were perusing out on the town.
